About the Process


48HRS Yeast Inoculated Naturals: After selective picking, the coffee cherries are washed to eliminate floaters and then taken to the drying yard for 60 hours. The semi-dried cherries are then moved to sealed tanks for a controlled anaerobic fermentation process that lasts 48 hours, during which a custom yeast culture is introduced. The drying process continues until the coffee reaches a moisture content of 11-12%.

Cupper's Notes

You'll first pick up notes of juicy, well-textured mulberry, which adds sweetness to the cup. Then comes a burst of blueberry that brightens the whole experience, creating a fruity note, followed by a hint of cashew maple that rounds it out, adding a rich, nutty sweetness that lingers on the palate.

About the Origin

Komal Sable, along with Akshay Dasrath, together run Mooleh Maney Estate and the South India Coffee Company, where they produce sustainable and environmentally responsible high quality coffee using traditional farming techniques. Their plantation is located in North Coorg, on the banks of the Harangi backwaters in the foothills of the Western Ghats.
