About the Process


Black Honey: The coffee is harvested only in March and April, as Excelsa beans take 12 months to ripen. After harvesting, the cherries are floated and later undergo anaerobic fermentation both before and after pulping for a total of four days. This process leaves much of the mucilage on the beans, giving the cherries a rich burgundy hue as they dry slowly on raised beds.

This cup offers an incredibly sweet experience, starting with a prominent jackfruit flavor that transitions into notes reminiscent of star fruit. The mouthfeel is akin to muskmelon, providing a smooth and delightful finish.

About the Origin

Komal Sable, along with Akshay Dasrath, together run Mooleh Maney Estate and the South India Coffee Company, where they produce sustainable and environmentally responsible high quality coffee using traditional farming techniques. Their plantation is located in North Coorg, on the banks of the Harangi backwaters in the foothills of the Western Ghats.
