About the process:
Naturals: This lot undergoes a carefully controlled fermentation process using Lactic Acid Bacteria (LAB), Saccharomyces, and Pichia, each playing a crucial role in shaping its sensory profile. LAB introduces a smooth, creamy acidity that enhances the coffee's texture, while Saccharomyces yeast amplifies vibrant tropical fruit and floral notes, adding depth and complexity. Pichia, a key refining agent, ensures a clean and well-structured fermentation, allowing the distinct flavors to shine without overpowering one another. The result is a meticulously balanced cup with a rich, dynamic expression of acidity, sweetness, and clarity.
