About the Process
Anaerobic Naturals: This is a 60-hour anaerobic fermentation, natural-processed coffee, sourced from the Catuai varietal grown on our farm at 4,450 feet. The cherries were harvested from the "Godown Patte" block, with a Brix reading of 23.9. After removing floaters, the cherries were placed in stainless steel fermenters, where they underwent anaerobic fermentation for 60 hours. Once fermentation was complete, the coffee was transferred directly to raised beds for slow drying. Over the next 30 days, the coffee was carefully raked to ensure even drying.
