About the Process

 

Washed ProcessDuring coffee processing, Lactobacillus starter culture is employed during the second phase of sequential fermentation to enhance flavor development. Following the initial fermentation phase, the coffee cherries are introduced to Lactobacillus, a type of lactic acid bacteria. This bacteria converts sugars in the mucilage into lactic acid, creating an acidic, low-pH environment. This controlled fermentation process helps inhibit undesirable bacteria and promotes beneficial microbial activity, leading to complex flavor profiles in the coffee, often with fruity, tangy, or yogurt-like notes, while also improving the overall balance and smoothness of the final cup.

 


Cupper's Notes

 

In this cup, bright notes of orange zest stand out, immediately awakening the senses with a burst of citrus and freshness. As the initial zing fades, rich undertones of sweet raisins emerge. Finally, a luscious wave of caramel envelops the taste buds, adding a smooth, indulgent finish that lingers on the palate.

About Kerehaklu Estate

Kerehaklu Estate is a sustainable, biodiversity-friendly farm in Chikmagalur, Karnataka, India. Specialty coffee is grown alongside several varieties of pepper, avocados, citrus and mulberries - all in harmony with the local flora and fauna. 

Kerehaklu has been run by the Thipaiah family since 1953 and is now overseen by Pranoy Thipaiah, who is the fifth generation to do so. The farm has gone chemical-free in late 2016 and are thus experiencing a gradual influx of birds and small mammals from the neighbouring Bhadra State forest.
